Apple Crunch Malt Ice Cream

No-Churning to make this delicious ice cream!

Ingredients

Apple Compote:
•  1/4 cup brown sugar
•  2 Tbsp butter
•  1 heaping Tbsp of Soda Fountain ® Malted Milk Powder
•  1 tsp apple pie spice or cinnamon
•  2 medium sized Granny Smith apples peeled and cut into small pieces

Ice Cream Base:
•  One 14 ounce can sweetened condensed milk
•  1/2 tsp apple pie spice or cinnamon
•  1/4 cup Soda Fountain ® Malted Milk Powder
•  1/2 tsp pure vanilla extract
•  2 1/2  cups cold heavy whipping cream
•  3/4 cup crushed “crunchy” oatmeal, snickerdoodles, chocolate chip or whatever cookies you desire.

First prepare apple compote:  Place brown sugar and butter in a medium saucepan.  Stir until butter is melted and the brown sugar and butter is combined.  Add diced up apples, pie spice and malt powder, stir to coat the apples.  Simmer, partially covered, for 15 – 20 minutes or until apples are tender.  Stir occasionally.

Transfer apple compote to a bowl and refrigerate until chilled.  Once chilled, prepare ice cream base.

First prepare apple compote:  In a large bowl, combine sweetened condensed milk, pie spices, malt powder and vanilla extract.  Puree half the apple compote.  If it isn’t complete smooth, that is fine.  Stir in the pureed compote into the condensed milk mixture.

Using a hand mixer or stand mixer, whip the heavy whipping cream until stiff peaks form.  Gently fold in half the whipped cream into condensed milk mixer, then fold in the other half.  Mix in half of the apple compote.  Next, stir in most of the cookie crumbs, preserving about 3 Tbsp. for top.

Pour half the ice cream in a 2 quart container (a loaf pan work great).  Top with the other half of apple compote.  Pour the last half of ice cream base and top with the rest of the cookie crumbs.

Cover and freeze until firm, at least 6 hours.
