Lemon Malt Snowballs Cookies

Add the zest of Lemon!

Ingredients

  • 2/3 cup sugar
  • 1 Tablespoon finely grated lemon zest
  • 1 stick unsalted butter, at room temperature
  • 3 Tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 2 cups all-purposed flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup Soda Fountain Malted Milk Powder
  • 1/4 cup powdered sugar

Instructions

Preheat oven to 325 degrees F.

Combine the lemon zest and sugar in a bowl.  Using your hand, rub the zest of lemon into sugar until the mixture is very fragrant.

Add the butter. Using blender, cream together the butter and lemon sugar, stopping to scrape the sides of the bowl as necessary.

Add the lemon juice, maple syrup, vanilla extract and lemon extract.  Beat until combined.  Mixture may look curdled because of the lemon juice.

Add flour, baking soda and sea salt. Beat until dough comes together.

In a small bowl, mix together Soda Fountain Malted Milk Powder and powdered sugar. Set aside.

Shape in 1-inch balls and place on parchment lined baking sheets.  Place cookie sheet on baking rack in middle of oven.  Bake 10 to 15 minutes on baking pan just until cookies slightly brown on edges.  Best to under-cook them slightly than to over cook them.

Remove cookie from oven and allow to cool for a few minutes on the baking pan.  Once cookie cooled, toss them lightly in malt/powdered sugar mixture.  Place on a cooling rack to finish the cooling process.
