Low Sugar, Nutty, Chocolate and Coconut Cookies w/Malt

Ingredients

In a large bowl mix together:

In a separate bowl, combined: 

  • 1/3 cup swerve confection sugar
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup crusted pecans
  • 1/2 cup crushed walnuts
  • 1/3 cup sugar free chocolate chips
  • 1/3 cup sugar free salted caramel chip

Instructions

Preheat oven to 350 degrees

Mix the egg yolks, butter, melted coconut oil and malt in a large bowl until creamy.

In a separate bowl, mix together the nuts, swerve, coconut and chips together.

Pour into the cream bowl and fold until nuts and coconut are covered with creamy mixture.

Place in refrigerator for 45 minutes

Scoop in small balls onto parchment paper and cookie sheet

Bake 8 – 10 minutes or until lightly browned.

Makes appx. 12 cookies.
