Ingredients for truffles:
8 ounces of bittersweet chocolate chips
1/2 cup heavy cream
1/3 cup Soda Fountain ® Malted Milk Powder
Ingredients for coating:
1 tbsp unsweetened cocoa powder
1/3 cup Soda Fountain ® Malted Milk Powder
Place the chocolate chips in a medium mixing bowl and set aside.
In a small sauce pan, heat the heavy cream over medium-high. As it simmers, whisk in the malt powder, stirring until blended.
Once cream and malt powder come to a boil remove from the heat and pour over the chocolate chips.
Let mixture sit for 3 minutes,
Stir until chocolate chips are completely melted making sure to mix well.
Allow the truffle mixture to cool slightly, then cover bowl and chill in refrigerator for 3 hours or overnight.
To coat the truffles:
In a small bowl, whisk the cocoa powder and malt powder topping.
Use a tbsp to scoop out the truffle mixture and roll into a ball.
Toss truffle mixture into the topping mixture.
Enjoy!
Note: Truffles will soften if they are warm, keeping them refrigerated before serving is key. If the topping melts into truffles before serving, roll in topping mixture again.
