For all those who LOVE DARK CHOCOLATE, try this recipe! Makes 4 parfaits
Ingredients
For the Malted Dark Chocolate Pudding:
1/3 cup cocoa powder
1/3 cup cornstarch
2/3 cup Soda Fountain® malted milk powder
½ tsp salt
1 cup sugar
3 cups 2% or whole milk
1 ½ tsp vanilla extract
4 ounces dark chocolate, I used Ghirardelli® dark chocolate melting wafers
For Chocolate Animal Cracker Crust:
2 cups chocolate animal crackers
¼ tsp salt
3 Tbsp sugar
6 Tbsp of melted butter
Instructions: For the Malted Dark Chocolate Pudding
In a medium saucepan, mix all the dry ingredients, whisk to combined. Slowly add milk into the dry ingredients and whisk well until blended. Cook mixture over medium to high heat – stirring constantly – until it comes to a boil. Whisk the entire time and do not rush the process because it will thicken as you stir. Cook for an additional 2 minutes, then remove pan from heat.
Stir in dark chocolate melting wafers and vanilla and whisk well to combine. Make sure chocolate wafers melt entirely. Set aside to cool.
Instructions: For the Chocolate Animal Cracker Crust:
In the body of a blender or food processor, pulse animal crackers until they are fine crumbs. Pour into a medium size bowl. Add salt and sugar. Melt butter and pour into dry ingredients. Mix until all is moist.
In a Parfait glass, alternate crust then pudding. Make sure pudding is cool. Place in refrigerator to cool. Top with whipping cream.
